High flavor-intensity, with a moderate sour taste, low vegetal olfactory-gustatory sensation, moderate sensation of caramel and butter.
The cheese is quite hard, buttery and melts-in-the-mouth. Lightly crumbly.
The "Queso Castellano", made of 100% raw sheep’s milk and/ or pasteurized milk, presents a moderately high aroma, with some small differences according its maturing stage: a pleasant aroma in the "soft" cheese, odorous in "cured" and excellent aroma in vintage cheeses.
It should be noted the caramel aroma more appreciable in cheeses made with pasteurized milk because of the caramelization of lactose. To a lesser extent, it should be noted a vegetal aroma and in more cured cheeses, it can be distinguished a low fruity and nuts aroma.
